KARELI KI NIHARI (Slow Cooked Lamb Shanks, serves 4)

This dish is an amazing way to serve humble lamb shanks, whether for a Diwali celebration or just a night in with family. Make your own curry base if you prefer, but we really like Patak’s spice bases, and they are made with amazing ingredients.

Ingredients
2 tbsp vegetable oil
4 lamb shanks
2 medium brown onions, sliced
400g tin of chopped tomatoes
100 ml chicken stock
150g cherry tomatoes
4 tbsp Patak’s Rogan Josh spice paste
Chopped coriander to garnish
Brown the lamb shanks in a pan with the oil. Place the shanks, onions, spice paste, tomatoes and stock into a slow cooker and cook on low for 8 hours. Add the cherry tomatoes 20 minutes prior to serving.
Garnish with cilantro and serve with roast vegetables.
